Monday's Meal

In the spirit of Dr. Oz, the following meal is not only delicious, but also very healthy...and, yes, it's the one requiring grated gingeroot.

Asian Salmon- 4 servings

Ingredients:

4 skinless salmon fillets (about 4 ounces each)
1 tablespoon Olive Oil
1 garlic clove, minced
1 tablespoon grated gingerroot
1 teaspoon lite soy sauce
1 teaspoon maple syrup
2 green onions, chopped

1) Mix ingredients together and spread evenly over each fillet.
2) Heat a rigid grill pan over medium heat until hot
3) Cook 3-4 minutes per side, or until salmon is firm

It IS really delicious...Paul even ate it! Although I'm kind of fed up with the Dr. Oz crap...I gained 1 lb and nearly lost a finger,(I will loose the nail), while chopping one of the gazillion veggies for my whole wheat pizza! YIKES! I guess just a casualty of being healthy?
